I love making this super simple power house chia pudding for breakfast whenever we are staying in hotels, packed full of protein & omega-3’s.
Knowing Banjo is eating high frequency foods while we are on the road is so important to me as it keeps his energy and mood levels high.
Travelling can be quite draining on children so it is important to keep them well fed & hydrated and include lots of rest. We always stop for fresh coconuts along the way.
I will often travel with chia seeds pre mixed with spices in my luggage and just buy coconut milk, a high quality muesli and whatever fruit is in season from a local health food store or organic markets.
COCONUT CHIA PUDDING
2 cups organic coconut milk or almond milk. I like to use a half/half blend.
1⁄2 cup Chia Seeds
1⁄2 teaspoon high quality vanilla bean powder
1⁄4 cup Canadian maple syrup
1⁄4 teaspoon organic cinnamon powder
Whisk all ingredients in together in a bowl until chia seeds are not clumpy anymore.
Pour mixture into a jar or glass container and place in the refrigerator for at least 4 hours or overnight to let gel. I like to make this at bedtime so it is ready in the am for breakfast.
Serve with a fresh fruit salad, muesli & a selection of local cold pressed juices.
