Family is everything so I try to be the most present mom, wife, sister, daughter and friend to those in my life. In addition, I co-founded AKID Brand with my husband two years ago which quickly became my 3rd child. AKID went from a side project to a full time job in a matter of months and although I wouldn’t want it any other way, it’s busy!

Recipe you share with your children in the morning?

I like clean, simple food. One of my regular morning drinks is a green shake. Stone (my youngest) is obsessed with this. The ingredients change based on what greens I have available, usually kale, chard, banana, Mushroom Based Protein Powder from Moon Juice, cinnamon, almond milk and water.

Banana Coconut Muffins

My kids and my friends also love these Banana Coconut muffins.

I tweak the original recipe from One Hungry Mami by throwing in Almonds, berries or any other good things that sound appealing that morning. I also make them into muffins instead of a loaf- a perfect mid morning snack.

INGREDIENTS

• 3 large and ripe bananas
• 1 cup of gluten free flour
• 1 cup of gluten free oats,
processed to make flour
• 1/2 tsp baking soda
• 1/2 tsp baking powder
• 1/4 tsp Himalayan pink salt
• 1/3 cup shredded coconut
• 1/3 cup raw walnuts, chopped
• 1/3 cup of dark chocolate
chips (dairy free)
• 1/2 cup of coconut oil

METHOD

1 Pre-heat oven to 180 degrees celcius. Depending on what you are making (muffins or loaf), spray your tin with coconut oil and set aside.

2 In a large mixing bowl, sift the flours together, and then add the baking soda, baking powder and salt.

3 Mix well to combine.

4 In a small bowl, mash your bananas well, I try to leave only very small lumps but totally up to you and your taste.

5 Add the banana and oil to the flour mixture, as well as the choc chips, walnuts and coconut, and stir gently to combine.

6 Pour the mixture into prepared pan, and sprinkle on some more chopped walnuts, coconut and choc-chips.

7 Place in the oven and bake for approximately 35 minutes for loaf and 20-25 minutes for muffins.

Remember that all ovens are different so I would just check cake with a skewer when I reach the 20 minute mark to see how they’re traveling.

Where do you like to go get Wild together?

Joshua Tree in California. It's magical and recharging. We camp at night and go rock climbing during the day. There's never another soul in sight!

• raspberries
• strawberries
• dates
• almond butter
• coconut flakes
• Ezekiel Breakfast Crunch

METHOD

Mixed around in a baking tray, and heat  for 20 mins until the juices are flowing and the crunch has turned golden brown!
